Easy Freezer-Friendly Enchiladas: A Busy Mom’s Lifesaver

If dinnertime feels like a daily battle, freezer-friendly enchiladas are about to become your new best friend! These enchiladas are quick to prepare, packed with flavour, and perfect for stocking your freezer so you can enjoy a homemade meal even on your busiest nights.

We are going to stock up on enchiladas. You can add cubed and roasted sweet potatoes and a rinsed can of black beans if you’d like. The recipe is plain, but feel free to add in some vegetables, jalapeño and corn would be delicious too.

Thaw sauce in fridge overnight or run lukewarm water over to break up contents. The portions are for 6, it’s a 9x13 foil pan. If you need to make it smaller please do.

How to Make the Best Freezer Enchiladas -3 Portions

INGREDIENTS

  • 6 cups shredded chicken (2 rotisserie chickens)

*portion for your family size*

DIRECTIONS

  1. Preheat oven to 300 degrees F

  2. Combine chicken, 3/4 cups of cheese, and 3/4 cups of enchilada sauce in a bowl.

  3. Working in batches, brush oil on tortillas and place onto baking sheet with parchment paper. Bake 3 minutes.

  4. Place 1/4 cup of chicken mixture in tortilla, roll up, place seam side down in a greased tray. Continue with all tortillas.

  5. Wrap trays with plastic wrap. Fill 3 quart size freezer bags with enchilada sauce, and 3 quart size freezer bags with remaining cheese. Each tray gets one on top of plastic wrap. Cover everything with foil and label.

Cook From Frozen

Preheat oven to 400.

Remove packaging. Brush tortilla tops w olive oil and bake for 15 minute.

Run sauce under warm water, until you can break it up and microwave for 1-2 minutes.

Remove pan, cover in sauce and then cheese, cover with foil and bake 20-25 minutes more.

Serve with avocado, cilantro, lime wedges, thinly sliced radish, or sour cream.
